Yabby salad dressing

Makes 500 ml


375 ml chicken stock
6 tbsp black vinegar
2 tbsp white vinegar
5 tsp sugar
2 tbsp coriander, chopped
1 1/2 tbsp ginger, finely chopped
4 cloves garlic, finely chopped
1 large chilli, finely chopped
4 tbsp spring onions, finely chopped
1/2 tsp sesame oil


Place all ingredients (except the spring onions) in a medium pot and bring to the boil.
Remove from the heat and add the spring onions.
Allow to cool and use to dress yabbies and salad.
